Eric the EPICurean is a monthly blog series in which our very own talented chef, Eric Rasmussen, creates a truly EPIC meal. With the launch of our new Lamb Currant Mint bar, Eric created a recipe for Lamb Gyros (EPIC style).
What you’ll need:
8 pcs Romaine lettuce leaves
8 Lamb Currant Mint Bars (diced)
1-2 Spoons Tomato, Cucumber, Red Onion relish
1-2 Spoons Tzatziki sauce
1 tbl coconut oil (for sauteing)
1.5 Cups Cherry Tomatoes (Cut in halves)
1 Medium Cucumber
1/2 Red Onion (Diced)
Juice of 1/2 a lemon
Salt and pepper to Taste
To assemble - Peel and cut the cucumber in half length wise. Using a small spoon scrape out the seeds from the center. Once cleaned out cut the cucumber into a medium sized dice. Combine all ingredients together in a bowl and let set to marry the flavors (at least 10 Minutes).
Paleo Tzatziki Sauce
2 Large egg yolks
1/4 Cup Coconut Oil (warm)
1/2 Cup Olive Oil
2 Tbsp Dill
1/4 Tsp oregano
Lemon Juice (1/2 lemon)
1/2 Cucumber (Seeded and diced)
Salt and Pepper to taste
To assemble - Using a food processor add egg yolks, dill, oregano, salt, and lemon juice. Turn on high speed to combine ingredients. Once combined slowly start to stream in the coconut oil and olive oil to create an emulsion. Finish by adding in half of the diced cucumber into the mixer until the consistency is a light sauce. Using the leftover diced cucumber, fold into the sauce. Finish with salt and pepper to taste.
To assemble - Gently sauté the diced Lamb bars in coconut oil over medium, to med-high heat to heat thoroughly. Once heated spoon equal amounts into each lettuce leaf followed by the Tzatziki sauce and finishing with the relish for garnish.
