Recipe by Kristen Olson
Serves 6
Prep Time: 20 Minutes
Start to Finish: 1 Hour 45 Minutes
INGREDIENTS
1 bag (2.5 oz) EPIC™ Maple Bacon Seasoning Pork Cracklings
1 cup unsalted, roasted whole almonds
1/2 cup unsalted, roasted cashews
1 cup salted plantain chips
1/2 lb sugar-free uncured bacon (6 to 8 slices), crisply cooked and cut into 1-inch pieces
1/4 cup real maple syrup
1 tablespoon EPIC™ Organic Pork Fat
1/2 teaspoon smoked paprika
1/4 teaspoon salt
DIRECTIONS
Heat oven to 300°F. Line a 15x10x1-inch pan with foil or parchment paper. In large bowl, mix pork cracklings, almonds, cashews, plantain chips and bacon. Set aside.
In 1-quart saucepan, heat maple syrup and pork fat over medium-low heat, stirring occasionally until melted and thoroughly combined; remove from heat. Cool 2 minutes. Carefully stir in smoked paprika and salt. Pour over pork cracklings mixture; toss until evenly coated.
Spread snack mixture on prepared pan. Bake 15 minutes, stirring every 5 minutes, to caramelize mixture. Cool completely, about 1 hour. Store covered in refrigerator.
Epic Tips
Make it spicy! If you like spicier flavors, try chipotle chili powder in place of the smoked paprika.
Store snack mix in covered container in the refrigerator for up to 4 days.
If you’re unable to find EPIC Maple Bacon Pork Cracklings, substitute with EPIC Oven Baked Pork Rinds. The Pink Himalayan + Sea Salt flavor would be a great substitute.
